How was this freeze-dried soup developed?
We wanted a classic Quebec cuisine that was synonymous with comfort . The goal of all this was to allow any traveler/adventurer to bring a little bit of Quebec with them .
Soups are also a staple when hiking and camping, so having our own version was a must, and after doing some research, we couldn't find any pea soup made for hiking other than canned.
Where does the name "Boreal Pea Soup" come from?
The name for this freeze-dried soup was chosen because it is more common in cold weather when we eat this type of meal in everyday life.
We wanted to pay tribute to the explorers who go to colder regions to challenge nature .
The term "boreal" also comes from the spices we put in boreal pea soup which have a boreal flavor.
Have you changed the recipe since the beginning?
In the first version of the recipe (2020-2022) we used whole yellow peas believing it was the best choice at that time.
Always keen to improve our existing products, we decided to change the recipe. After several months of testing and tasting, we finally chose to replace them with split yellow peas to offer a much more consistent and comforting freeze-dried soup.
We've had great feedback following this change. It just goes to show that continuous improvement is a choice that pays off!
How can we prepare this freeze-dried soup?
The first method to prepare the boreal pea soup would be to simply mix it with hot water. However, we have discovered two additional ways of preparation:
Add cold water to the soup
Some explorers, due to lack of time and the desire to save weight, decide to eat their freeze-dried soup without using a burner. That is to say, they use the "Cold Soaking" method , which consists of putting cold water in the bag and letting it sit.
Vary the amount of water
It is also quite possible to put more (or less) water in the Boreal Pea Soup to have a completely different texture . Add more water for a more liquid soup or less to have a much creamier mixture.
